What is roasting? This is the art of cooking coffee beans.
During cooking the grains are continuously stirred to be evenly exposed to heat. They begin to swell by crackling and their color changes until becoming brown more or less dark.
Phases necessary in roasting to make an exceptional coffee:
* Drying step: the green grain will lose its moisture and turn yellow. This is the yellow point (baking bread flavors)
* Caramelization stage: Maillard reaction that allows the grains to rise and open and swell until the first crackling.
* Development stage: it determines the strength of the soft, medium or full-bodied roast.
* Prolonged cooking stage: very cooked coffee cracks several times and becomes oily. The natural sugar in coffee comes out of the seed and caramelizes outside. Last step: infusion in the storage bins. The aromas mix and harmonize together in a closed tank protected from the air. During the preparation of orders, volatile aromas emerge when opening the tank and offer us a very rich palette of aromas.
